Surely Satisfying Chocolate Surprise

Ending the muffins-a-month with a surprise. If your reading this blog before you eat a muffin i guess the surprise is ruined, but oh well.

2 cups of flour
3/4 cup cocoa
1 1/4 cup cane sugar
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 "eggs"
3/4 cup "yogurt"
1/2 cup melted "butter"
1/2 cup "milk"
1 tsp vanilla
1 tsp cayenne
2 tbs instant expresso

*preheat oven to 400

Combine flour, cocoa, baking powder and baking soda and salt in a large bowl. Sift. Add sugar. In a separate bowl mix together wet ingredients, add cayenne and expresso. Add wet to dry, fold in chocolate chunks. Spoon into lined muffin tin. Bake for 20-25 minutes.
