Zoinks! Zucchini?!

I have been looking forward to these muffins. I also have to give a nod to Trevor for the brilliance of zucchini in a muffin. I am sure ill be making these all summer long with the abundance of zucchini that will inevitable come from the garden.

3 cups flour
1 tbs baking bowder
1 tsp salt
1 1/2 tsp cinnamon
3/4 tsp nutemeg
1 cup chocolate chip
2 "eggs"
1/2 cup apple sauce
3/4 cup oil
1 1/2 cup cane sugar
2 tsp vanilla
2 cups shredded zucchini
1 cup chopped pecans

*preheat oven to 350

In a large bowl combine flour baking powder, salt, cinnamon, and nutmeg. In a separate bowl combine "eggs", applesauce, oil, sugar, vanilla, and zucchini. Ad wet to dry. Fold in nuts and chocolate chips and stir until just mixed. Spoon into line muffin tin. Bake for 20-25 minutes

  1. Cait, The blog looks great. I could not think of a better way for you to show your work.

I'm excited to see how you post Dance-A-Day.

  2. Dude, Zucchini in a muffin. Who would have thought? I had to share this muffin with three other people once they found out how good it was. Still, even a third of this muffin was better than having a whole of most others.

  3. Ode to Cait's Muffins

Through the month of January drear,
Through chill and ice and snow,
A darling gal, a friend so dear,
Joyfully bakes so her friends might know:

Though the weather makes us pensive,
Though it makes our hearts toughen,
    We have a warm, tasty alternative;
Sweet Cait brings us vegan muffins.

Down hallways to your treats we have races.
You nourish our days and our souls.
From rooftops we sing your praises.
Such creative concoctions make us whole.

    Oh, muffins! Oh, Cait!
Your baking deeds and kind sharing ways
    Are attributes we all appreciate.
And we wish this month was made of a million days.
