I have been looking forward to these muffins. I also have to give a nod to Trevor for the brilliance of zucchini in a muffin. I am sure ill be making these all summer long with the abundance of zucchini that will inevitable come from the garden.
3 cups flour
1 tbs baking bowder
1 tsp salt
1 1/2 tsp cinnamon
3/4 tsp nutemeg
1 cup chocolate chip
2 "eggs"
1/2 cup apple sauce
3/4 cup oil
1 1/2 cup cane sugar
2 tsp vanilla
2 cups shredded zucchini
1 cup chopped pecans
*preheat oven to 350
In a large bowl combine flour baking powder, salt, cinnamon, and nutmeg. In a separate bowl combine "eggs", applesauce, oil, sugar, vanilla, and zucchini. Ad wet to dry. Fold in nuts and chocolate chips and stir until just mixed. Spoon into line muffin tin. Bake for 20-25 minutes

Dude, Zucchini in a muffin. Who would have thought? I had to share this muffin with three other people once they found out how good it was. Still, even a third of this muffin was better than having a whole of most others.
