1/2 pecans chopped and toasted
2 cups grated carrot

1 large apple grated
2 cups flour
1 cup sugar
3/4 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp salt
1 1/2 tsp ground cinnamon
1 cup coconut
3 "eggs"
3/4 cup oil
1 1/2 tsp vanilla
*preheat oven 350
toast pecans. Grate carrots and apple. Sift together dry stuff in a large bowl. Add coconut and nuts. In a separate bowl mix wet stuff. Add wet, carrot, and apple to dry and stir until just mixed. Spoon into lined muffin tin. Bake 20 - 25 minutes
