Blissful Blackberry Banana

I have to credit my dear friend Andrew for the notion of blackberries in a muffin. I also have to credit him for the actually blackberries seeing as how he paid for them. Or perhaps i should credit Kroger for having the blackberries on sale for two dollars initially spurring Andrew's interest there in. At any rate they are some mighty pretty muffins.

1 cup brown sugar
1/2 cup "butter"
2 "eggs"
3 bananas
1/2 soymilk + 1tsp vinegar
1 1/2 tsp almond extact
1 1/2 cup unbleached flour
1 cup whole wheat flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
1 cup walnuts
1 cup black berries
Topping:
2 tbs butter
1/4 cup flour
2 tbs brown sugar
1/4 tsp cinnamon

*preheat oven to 375

Cream together sugar, "butter", "egg", and banana. Add sour "milk" and almond extract. In a separate bowl combine dry ingredients. Add wet to dry. Fold in nuts and berries. Spoon into lined tin. Cut together topping ingredients in a small bowl. Spoon batter into lined muffin tin. Sprinkle on topping. Bake for 25 minutes

  2. i am excited about your march plant a-day! i am growing herbs right now and plan on growing a garden with my dad. i have one half of it this year. theres these really funny tomatoes called "dolly partons." They are so big they tople over on to the garden bed. and they usually grow with a split or "cleavage line"they are on the top of my list to plant this year. i thought it would be amusing.

    if you never read this, i think you should it's called "animal, vegetable, miracle." it isn't vegan but it talks about being resourceful and eating locally from farmers and the earth.

  3. One of my favorite fruit based muffins that Cait has made so far. Blackberries that are sharp and tart mix with the mellowness of the banana to make you temporarily lose your mind

  4. thanks for this one cait. i thought blackberries might be interesting. the top of this muffin was very good and sweet. however, i thought that the bannaanana overwhelmed the tartness of blackberries (the best part). well done though.
    i give it 7 muffins.
