Wacky Walnut Apple

Originally these did not have a streusel on them. I have always felt like streusel topping was a muffin cop-out. It doesn't really matter what muffin body tastes like, if it has streusel on top it is of course going to taste quite good. I mean come on, butter, brown sugar, flour and cinnamon, delicious. I guess you could call me a muffin purest. I feel like a muffin should hold its own sans-streusel. But then came that damned blackberry banana muffin two days ago. Since they were special for someone in particular i decided to spring for the streusel. I am now ashamed to find my self caught in the the crumbley toping's web of illusion and lies. I have an almost irrepressible urge to go through and add streusel topping to every one of my recipes (maybe not the perky peanutbutte pretzel). I pledge in the future to resist the topping temptation but for today, i give you, "wacky walnut apple.........streusel" muffins.

3 cups flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp ground cinnamon
3/4 cup sugar
3 "eggs"
2 apples grated
1/2 cup "butter"
1/4 cup "milk"
1 cup walnuts
Struesel topping:
2 tbs brown sugar
2 tbs "butter"
1/4 cup flour
1/2 tsp cinnamon

*preheat 375

Cream together "butter" and sugar, add "egg" stir. Add "milk" and stir. In a separate large bowl combine all dry ingredients. Add nuts to flour mix and then add wet mixture stirring until just mixed. In a small bowl with a fork cut streusel ingredients together. Spoon batter into lined muffin tin. Sprinkle streusel topping. Bake 20-25 minutes.


  1. Apples inside a muffin, fuck yeah. This muffin was so hearty and filling. It made me happy.

    this is a messy muffin, but for sure a good one.

  3. cait said that if i didn't review muffins i would be cut off when she gave me this one. i realized after i had eaten it that i consumed it so quickly i didn't really pay attention to what it tasted like. i give it 8 muffins because i think it had drugs in it.
