Slightly crumbly but then i guess so is cornbread.
1 1/2 cup corn meal
1 1/2 cup flour
1 tbs baking powder
1/2 tsp salt
1/2 cup sugar
1/2 cup oil
1 1/4 cup "milk"
2 tbs soy yogurt
2 tbs flax + 3 tbs water (1 "egg")
1 tsp vanilla
1 1/4 blue berries
Sift together dry ingredients in a large bowl. In a separate bowl mix wet ingredients. Add blue berries to flour and mix gently. Add wet stuff and stir until just mixed. Spoon into lined muffin tin. Bake 20-25 minutes.

The salty cornmeal give the muffin a nice flavor a texture, but it does not overwhelm the sweetness of the blueberries. I would eat six or seven more if I could.
i will review a muffin...though i'm not sure how tasty it will be after the two-week journey to china!
