Apples are Awesome? Affirmative! 1/6/09

The muffins top makes this muffin.

Topping:
1/2 cup sugar (i used unprocessed chunky stuff)
1/2 cup chopped pecans
1 tsp sugar
1/4 cup flour
1 1/2-2 tbs oil

Muffin:
3 cups of flour
1 cup of sugar
1 tbsp baking powder
3 tsp cinnamon
1 tsp salt
1/2 "butter"
4 tbs flax + 6 tbs water (2 "eggs")
3/4 -1 cup "milk"
2 Granny Smith or Macintosh Apples

*Preheat oven 350

In small bowl mix together topping. Mix together dry ingredients in a large bowl. In a small bowl mix together "egg" mixture. Peal both apples dice into small pieces, set aside. Cut butter into dry mixture. Add "milk", "egg", one apple chopped, and grate second apple into mix. Stir until just mixed. Spoon into lined muffin tin. Sprinkle topping over each. Bake for 20-25
