2 cups flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp salt
1 cup "milk"
2 tbs flax + 3 tbs water
1/4 cup "butter" melted
12 strawberries
*preheat oven 375
Slice strawberries. Mix in a large bowl flour, sugar, baking powder, and salt. Add wet stuff and mix gently. Spoon into lined muffin tin. push strawberry slices into each muffin tip up. Sprinkle top with sugar. Bake 20 -25 minutes.

Strawberry Shortcake muffin was soooooo good... I heated it up in the microwave and was so yummy!
ReplyDeleteI agree with Trevor, this muffin was difficult to eat because it looked so sweet I didn't want to mess up the aesthetic by scarfing it. It tasted twice as good as it looked though!
ReplyDeleteI have never before seen such a muffin. If this muffin isn't the ruler of all muffins than it is definitely the second in command.
ReplyDeleteThis muffin reminded me of the honey bunches of oats with the strawberries in them. i like that cereal a lot. wheres the crunch? 7 muffins.
