Shocking Strawberry Shortcake

These are some of my prettiest muffins so far. Simple too.
2 cups flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp salt
1 cup "milk"
2 tbs flax + 3 tbs water
1/4 cup "butter" melted
12 strawberries

*preheat oven 375

Slice strawberries. Mix in a large bowl flour, sugar, baking powder, and salt. Add wet stuff and mix gently. Spoon into lined muffin tin. push strawberry slices into each muffin tip up. Sprinkle top with sugar. Bake 20 -25 minutes.

  1. Four degrees outside but inside my tummy a taste of summer happily digests.
Do I hear cicadas? Do I see fireflies?

  4. I agree with Trevor, this muffin was difficult to eat because it looked so sweet I didn't want to mess up the aesthetic by scarfing it. It tasted twice as good as it looked though!

  5. I have never before seen such a muffin. If this muffin isn't the ruler of all muffins than it is definitely the second in command.
