Perky Peanut Butter Pretzel Muffins

the inspiration for these muffins came out of a muffin brainstorming session with my room mate leigh. And i must say, leigh, pretzels on a muffin....genius.

2 1/2 cup flour
1 tbs baking powder
1/2 tsp salt
1 cup sugar
1 cup peanut butter
4 tbs flax + 6 tbs water (two "eggs")
1 3/4 cup "milk"
1/2 oil
1 tsp vanilla
1 cup chocolate chips (for batter)
Topping:
1 cup crushed pretzels
1/2 cup chocolate chips
2-4 tbs "milk"

*Preheat 375

Crush or chop 1 cup of pretzels. Set up double boiler with topping chocolate chips in it. Combine flour, baking, powder, salt, and sugar in a large bowl. In a smaller bowl combine pb, "eggs", "milk", oil, and vanilla. Turn on double boiler. Add wet mix to dry and fold in chocolate chips. Stir until just mixed. Spoon Batter into lined muffin tins (keep and eye on the chocolate melting in double boiler). As the chocolate starts to melt in double boiler mix in "milk" until you get it to a drizzelable constistency. Sprinkle pretzels ontop of each muffin. Drizzel melted "milk chocolate" onto each muffin. Bake 20 -25 Minutes.

    This is my most favorite muffin ever. It was yummy and I would like to have eaten about 6 of them. Everyone in the world please try to make these. They are the best!!
