Outrageous Orange Spelt

I experience my first muffin related injury while making these, just a bloody knuckle while zesting, nothing serious, just sayin', i work hard for the muffin. After bloodying my knuckle i was left with extra zest so i made a zest sugar topping. I think it makes the muffin a little too orangy but i am not really a fan of citrus so i will leave it up to you.

2 cups spelt flour
1 3/4 tsp baking powder
1 1/2 tsp orange zest
1/4 tsp allspice
1/2 tsp salt
1/2 cup orange juice
1/4 cup apple sauce
1/3 cup oil
1/2 cup brown sugar
1 1/2tsp vanilla
4 tbs flax + 6 tbs water (2 "eggs")
optional topping:
1 tsp zest orange (or whatever is left over)
1/4 cup unprocessed sugar
tbs flour
1 tsp oil


*preheat oven 375

Sitr together dry ingredients in a large bowl. In a small bowl beat orange juice, apple sauce, oil, sugar, vanilla, eggs. Mix up topping. Spoon into line muffin tin. Sprinkle on topping. Bake for 20 minutes.

  2. Outrageous indeed! I waited for nearly an hour this morning just to get my sticky little paws on one of these tasty treats. Well worth it. The orange really tasted like orange! Still not sure what spelt is, but I liked it.
    My favorite part was when you zested your knuckle into the mix. Does that mean they'll still vegan?
