Cherished Cherry Almond

These made my house smell amazing...and i don't even like almond that much.

2 Cups flour
1/3 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/3 cup oil
3/4 cup "milk"
6 tbs soy yogurt
2 tsp almond extract
1 cup sliced almonds
3/4 cup fresh or frozen pitted cherries

*preheat 375

Sift together dry ingredients. Combine wet ingredients in a seperate bowl. Add cherries and 1/2 cup of almonds to flour mix. Mix gently coating cherries in flour. Add wet stuff in and stir until just mixed. Spoon into lined muffin tin. Sprinkle remaining almonds ontop and sprinkle some unrefined cane sugar. Bake 20-25 minutes.

  1. Very simple yet delicious recipe Cait. I think blueberries instead of cherries and some lemon zest would also be wonderful. Also interesting is the Fun-a-Day concept.

  2. I really want to make these! I love almond! I need to wait til May, though, because cherries are SUPER expensive this time of year in China. May, on the other hand, is cherry season! I'll be making these with all my cherries...
