Butterscotch Bonanza/Disaster

It was bound to happen, and this morning it did. 26 recipes in and I messed up. Didn't spray the muffin tin...
In all my recipes i suggest lining the muffin tin but for this project i have been greasing to cut down on paper waste. Today i failed to grease and was left with two sad excuses for muffins and 10 muffin tops that look more like cumby butterscotch cookies. I am sure they will be delicious, i mean the top is supposed to be the best part anyway right? right. still kinda a bummer.
*side note yesterday i made 5 batches of muffins to send to people who sent me muffin vouchers and they all came out splendidly, especially the perky pretzel peanut butter. focus on the positive.

3 cups flour
2 cups packed brown sugar
2/3 vegetable shortening
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp nutmeg
1/2 tsp cinnamon
1/2 tsp salt
1 cup "butter milk"
2 "eggs"
1 cup vegan butterscotch chips (i found mine at a local health food store)

*Preheat oven to 375

In a large bowl combine brown sugar and 2 cups of flour. Cut in the shortening. Pull 1/2 a cup of dry mix. Add baking powder, baking soda, nutmeg, cinnamon, salt. Add "butter milk" and "eggs". Stir until just mixed. Fold in chips. Spoon into lined muffin tin. Sprinkle with topping. Bake for 25 minutes

  2. Oooh! I just found out about this and am adding it to the Fun-A-Day list on the 31 Dreamers blog. Your project rings a special chord with me cuz I once had some folks over for brunch and just kept making vegan muffins without thinking. At the end of the morning there were 120 muffins. I know what you're going through...I know...
