Roma Tomatoes

These are the best for making sauce. Sometimes they are called plum. Every summer my poppy would bring my mom the extra tomoatoes from his garden. We'd slice and dice. Cook them down till there skins dropped away. My mom has this tomato torture device that we'd scoop the cooked down goop into. It looks sort of a cross between sauce pan and a flour sifter

Then we'd make sauce or freeze the juice for delicious sauce making in the fall and winter.
