Surely Satisfying Chocolate Surprise

Ending the muffins-a-month with a surprise. If your reading this blog before you eat a muffin i guess the surprise is ruined, but oh well.

2 cups of flour
3/4 cup cocoa
1 1/4 cup cane sugar
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 "eggs"
3/4 cup "yogurt"
1/2 cup melted "butter"
1/2 cup "milk"
1 tsp vanilla
1 tsp cayenne
2 tbs instant expresso

*preheat oven to 400

Combine flour, cocoa, baking powder and baking soda and salt in a large bowl. Sift. Add sugar. In a separate bowl mix together wet ingredients, add cayenne and expresso. Add wet to dry, fold in chocolate chunks. Spoon into lined muffin tin. Bake for 20-25 minutes.

Oh My Goodness Oatmeal

1 more day of muffins! I today's will go more quickly than yesterdays "anus" muffins. Remember every one its pronouced "annis". My bad...anyway i think these muffins will be a hit. They are super moist which is always good. A solid breakfast muffin.

1 1/2 cup oatmeal
1 1/4 cup flour
3/4 tsp cinnamon
1 tsp baking powder
3/4 tsp baking soda
1 cup apple sauce
1/2 cup "milk"
1/2 cup brown sugar
1 tbsp veg oil
1 "egg"
Topping:
1/4 c oatmeal
1/8 tsp cinnamon
1 tbsp brown sugar
1 tbsp melted butter

*preheat oven to 375

Combine oats, flour, cinnamon, baking powder, and soda. In a seperate bowl mix together apple sauce, brownsugar, oil, "egg", and milk. Add wet mix to dry and stir until just mixed. Combine topping ingredients in a small bowl. Spoon batter into lined muffin tin. Sprinkle on topping and bake for 20-25 minutes.

Ants in your pants Anise Lemon Poppy Seed

Anise? anybody? What i do know. Its seed pod is shaped like a star. Its used as a spice in eastern style cooking. Its a funny looking plant it the produce section that looks like a cross between nappa cabbage and dill weed. And it tastes like licorice, which makes this the first muffin that if i ate the muffins i make i definitely would not eat. But if you like licorice this is your muffin.

1 1/2 cup whole wheat flour
1 cup all purpose flour
1/4 cup sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tbsp poppy seed ( typed poopy seeds at first)
Zest of one lemon
1 tsp lemon extract
1 tsp anise extract
1 "egg"
3/4 cup "yogurt"
1 cup of orange juice

*preheat oven to 350

Combine dry ingredients including poppy seed and zest in a large bowl. In a small bowl combine "yogurt", "egg", extracts and orange juice. Add wet to dry and stir until just mixed. Spoon into lined muffin tin and bake for 20-25 minutes.

Appetite Appeasing Apricot

The world is ending outside and i am making muffins. There is about 2 inches of ice on every surface and i conscientiously took my life into my hands trudging to the coffee shop this morning to write this blog. But the muffins are warm and need to be given to people so i am willing to brave the storm.

2 1/2 cups of flour
2 1/2 tsp baking powder
1/2 tsp baking soda
2 tbs sugar
3/4 tsp salt
1/2 cup chopped apricots
1/3 cup sunflower seeds
1/2 cup "butter"
1 cup "milk"
2 "eggs"

*preheat oven to 375

Mix together dry ingredients. Cut in "butter". Add apricots and seeds. Add "milk" and "eggs". Stir until just mixed. Spoon into lined muffin tin. Bake for 20 minutes.

Now thats what I call Nutmeg!

I new friend, Anna, suggested a nutmeg muffin. She is apparently a big fan of the spice and subsequently way into silk nog. When i was at the kroger on a recent muffin run i noticed they were still carrying the holiday product. I picked some up and included it in this recipe as a true tribute to my friend Anna. I hope she visit athens again soon so i can make her a batch of these nutmegy muffins.

1 1/2 cup brown sugar
1/4 cup "butter"
3 cups flour
2 tsp baking powder
1 tsp baking soda
2 tsp nutmeg
1/2 tsp salt
1/2 cup "butter milk"
1/2 cup silk nog
2 "eggs"
1 cup walnuts and/or pecans

*preheat oven to 350

Mix 2 cups of flour and brown sugar in a large bowl. Cut in "butter" to form crumbs. Remove 3/4 cup of this mixture and set aside for topping. Add remain dry ingredient including rest of flour. Make a well in center of flour mix and add wet ingredients. Fold in nuts. Spoon into lined muffin tin, sprinkle with topping, and bake for 25 minutes.

Butterscotch Bonanza/Disaster

It was bound to happen, and this morning it did. 26 recipes in and I messed up. Didn't spray the muffin tin...
In all my recipes i suggest lining the muffin tin but for this project i have been greasing to cut down on paper waste. Today i failed to grease and was left with two sad excuses for muffins and 10 muffin tops that look more like cumby butterscotch cookies. I am sure they will be delicious, i mean the top is supposed to be the best part anyway right? right. still kinda a bummer.
*side note yesterday i made 5 batches of muffins to send to people who sent me muffin vouchers and they all came out splendidly, especially the perky pretzel peanut butter. focus on the positive.

3 cups flour
2 cups packed brown sugar
2/3 vegetable shortening
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp nutmeg
1/2 tsp cinnamon
1/2 tsp salt
1 cup "butter milk"
2 "eggs"
1 cup vegan butterscotch chips (i found mine at a local health food store)

*Preheat oven to 375

In a large bowl combine brown sugar and 2 cups of flour. Cut in the shortening. Pull 1/2 a cup of dry mix. Add baking powder, baking soda, nutmeg, cinnamon, salt. Add "butter milk" and "eggs". Stir until just mixed. Fold in chips. Spoon into lined muffin tin. Sprinkle with topping. Bake for 25 minutes

Raging Raspberry Vanilla Hazelnut

I ran out of flour! i woke up to make muffins this morning and discovered that my 15 pound bag of flour had finally maxed out! After a quick trip to the kroger i banged out these ragin' raspberry muffins. They are appropriately titled ragin' since a few are headed to rageburgh, PA. I got 3 muffin vouchers in the mail yesterday all from friends in pittsburgh. I also go two from other friends. I am about to embark on a muffin making marathon!

2 1/2 cup flour
1 1/2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/2 cup sugar
1/2 cup "yogurt"
2 "eggs"
1 tsp vanilla
1/4 cup oil
1/2 cup "milk"
1 1/2 cup raspberries
Topping:
1/4 cup flou
1/2 cup chopped hazel nuts
2 tbs brown sugar
2 tbs "butter"

*preheat oven to 350

Combine dry ingredients in a large bowl. In a separate bowl mix together wet stuff. Add raspberries to flour. Add wet stuff to dry mix. Fork together topping ingredients. Spoon into lined muffin tin. Bake for 25 - 30 minutes.

Zoinks! Zucchini?!

I have been looking forward to these muffins. I also have to give a nod to Trevor for the brilliance of zucchini in a muffin. I am sure ill be making these all summer long with the abundance of zucchini that will inevitable come from the garden.

3 cups flour
1 tbs baking bowder
1 tsp salt
1 1/2 tsp cinnamon
3/4 tsp nutemeg
1 cup chocolate chip
2 "eggs"
1/2 cup apple sauce
3/4 cup oil
1 1/2 cup cane sugar
2 tsp vanilla
2 cups shredded zucchini
1 cup chopped pecans

*preheat oven to 350

In a large bowl combine flour baking powder, salt, cinnamon, and nutmeg. In a separate bowl combine "eggs", applesauce, oil, sugar, vanilla, and zucchini. Ad wet to dry. Fold in nuts and chocolate chips and stir until just mixed. Spoon into line muffin tin. Bake for 20-25 minutes

Classy Coffee Cake Muffins

These are muffins with a purpose. That purpose being helping me sweet talk the art office to allow me to dance in the art loby every day from 215-245 next month. Wish me luck!

5 tbs "butter"
2 cups flour
1/4 cup sugar
1/2 tsp salt
3 tsp baking powder
1 "egg"
1 cup "milk"
1/2 cup brown sugar
1 tsp cinnamon
1 cup chopped nuts

* preheat oven 375

In a small bowl combine brown sugar, cinnamon, walnuts and 2 tbs "butter". In a large bowl combine dry ingredients. Cut remaining "butter" into flour mix. Add "milk", "egg", and half walnut mix. Stir until just mixed. Spoon batter into lined muffin tin. Sprinkle remaining walnut mix on top. Bake 20-25 minutes.

Persnickety Snickerdoodle

A week pre muffin quest was prime recipe writing time. I spent that week in Pittsburgh where i met an awesome person, chris, from bloomington with face tattoos ( I had previously heard of this person through the punk vine lovingly called "chris with shit on his face"). During one long day spent with chris at ths coffeeshop brainstorming, a mutual acqaintence, matt (or matty pop chart as i knew him first) was brought up. More specifically the fact the matt loves loves snickerdoodle cookies, and would certainly love a snickerdoodle muffin. So these muffins go out to Matt where ever he is, and i will be sure to bring a batch for him the next time I venture to bloomington indiana.

2 1/2 cups of flour
3/4 tsp baking soda
3/4 tsp cream of tartar
1/4 tsp salt
1/2 cup melted "butter"
1 cup sugar
2 "eggs"
1 cup "milk"
2 tsp vanilla
topping:
3/4 Cup cane sugar
1 1/2 - 2 tbs cinnamon

*Preheat oven to 375

In a large bowl combine flour, baking soda, cream of tartar, and salt. In a separte bowl combine remaining ingredients. Add wet to dry. Stir until just mixed. Spoon into lined muffin tin. Sprinkle sugar mixture liberally over each muffin and pat it in gently. Bake for 20 minutes.

Wacky Walnut Apple

Originally these did not have a streusel on them. I have always felt like streusel topping was a muffin cop-out. It doesn't really matter what muffin body tastes like, if it has streusel on top it is of course going to taste quite good. I mean come on, butter, brown sugar, flour and cinnamon, delicious. I guess you could call me a muffin purest. I feel like a muffin should hold its own sans-streusel. But then came that damned blackberry banana muffin two days ago. Since they were special for someone in particular i decided to spring for the streusel. I am now ashamed to find my self caught in the the crumbley toping's web of illusion and lies. I have an almost irrepressible urge to go through and add streusel topping to every one of my recipes (maybe not the perky peanutbutte pretzel). I pledge in the future to resist the topping temptation but for today, i give you, "wacky walnut apple.........streusel" muffins.

3 cups flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp ground cinnamon
3/4 cup sugar
3 "eggs"
2 apples grated
1/2 cup "butter"
1/4 cup "milk"
1 cup walnuts
Struesel topping:
2 tbs brown sugar
2 tbs "butter"
1/4 cup flour
1/2 tsp cinnamon

*preheat 375

Cream together "butter" and sugar, add "egg" stir. Add "milk" and stir. In a separate large bowl combine all dry ingredients. Add nuts to flour mix and then add wet mixture stirring until just mixed. In a small bowl with a fork cut streusel ingredients together. Spoon batter into lined muffin tin. Sprinkle streusel topping. Bake 20-25 minutes.

No Joke! Gingerbread Muffins!

the story of these muffins told as i will surely tell it many times today:
So this is actually the second day in a row that i made these gingerbread muffins. Yesterday, as you can see in the blog below i made black berry muffins with black berries that my good friend andrew bought under the pretense that i would make him black berry muffins so.... yesterday morning when i was making those muffins it occurred to me that he would probably want more than just one or two since they were his blackberries and all. The thought of giving andrew multiple muffins leaving me with hardly any muffins to spread around to the general public was too much for this small vegan baker to bare. Therefore, it seemed totally necessary to bake an extra batch of muffins. It would have been easy to just reserve a muffin from the second batch and pass it off a today's muffin but fret you not, i have committed to this project and refuse to sacrifice its integrity under any circumstance. So hear a sit blogging at 1 am about a second legitimate batch of ginger bread muffins officially counting as my 1/20 muffin a day muffin! fists in the air for muffin making integrity everywhere!

1/2 cup sugar
1/2 cup "butter"
1 "egg"
1 cup molasses
3 cups flour
1 1/2 tsp baking powder
1 tsp cinnamon
1 tsp ginger
1/2 tsp cloves
1/2 salt
1 cup hottttt water

*preheat oven to 350

Cream together "butter", sugar, "egg" and molasses. In a seperate large bowl combine all the dry ingredients mixing well. Add hottttt water to molasses mixture. Add wet mix to dry and stir until smoth. (still trying not to over mix but more than you usually mix a muffin, no flour spots should be showing). Spoon into lined muffin tin. Bake for 20-25 minutes.

Blissful Blackberry Banana

I have to credit my dear friend Andrew for the notion of blackberries in a muffin. I also have to credit him for the actually blackberries seeing as how he paid for them. Or perhaps i should credit Kroger for having the blackberries on sale for two dollars initially spurring Andrew's interest there in. At any rate they are some mighty pretty muffins.

1 cup brown sugar
1/2 cup "butter"
2 "eggs"
3 bananas
1/2 soymilk + 1tsp vinegar
1 1/2 tsp almond extact
1 1/2 cup unbleached flour
1 cup whole wheat flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
1 cup walnuts
1 cup black berries
Topping:
2 tbs butter
1/4 cup flour
2 tbs brown sugar
1/4 tsp cinnamon

*preheat oven to 375

Cream together sugar, "butter", "egg", and banana. Add sour "milk" and almond extract. In a separate bowl combine dry ingredients. Add wet to dry. Fold in nuts and berries. Spoon into lined tin. Cut together topping ingredients in a small bowl. Spoon batter into lined muffin tin. Sprinkle on topping. Bake for 25 minutes

Crafty Carrot Coconut

I am beginning to reach uncharted territory in my muffin designing. I really thought i went a little heavy on the carrots and apple in this muffin but fear not all is right with the world and i have yet to botch a batch in this muffin making quest.

1/2 pecans chopped and toasted
2 cups grated carrot
1 large apple grated
2 cups flour
1 cup sugar
3/4 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp salt
1 1/2 tsp ground cinnamon
1 cup coconut
3 "eggs"
3/4 cup oil
1 1/2 tsp vanilla

*preheat oven 350

toast pecans. Grate carrots and apple. Sift together dry stuff in a large bowl. Add coconut and nuts. In a separate bowl mix wet stuff. Add wet, carrot, and apple to dry and stir until just mixed. Spoon into lined muffin tin. Bake 20 - 25 minutes

Cherished Cherry Almond

These made my house smell amazing...and i don't even like almond that much.

2 Cups flour
1/3 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/3 cup oil
3/4 cup "milk"
6 tbs soy yogurt
2 tsp almond extract
1 cup sliced almonds
3/4 cup fresh or frozen pitted cherries

*preheat 375

Sift together dry ingredients. Combine wet ingredients in a seperate bowl. Add cherries and 1/2 cup of almonds to flour mix. Mix gently coating cherries in flour. Add wet stuff in and stir until just mixed. Spoon into lined muffin tin. Sprinkle remaining almonds ontop and sprinkle some unrefined cane sugar. Bake 20-25 minutes.

Shocking Strawberry Shortcake

These are some of my prettiest muffins so far. Simple too.
2 cups flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp salt
1 cup "milk"
2 tbs flax + 3 tbs water
1/4 cup "butter" melted
12 strawberries

*preheat oven 375

Slice strawberries. Mix in a large bowl flour, sugar, baking powder, and salt. Add wet stuff and mix gently. Spoon into lined muffin tin. push strawberry slices into each muffin tip up. Sprinkle top with sugar. Bake 20 -25 minutes.

Outrageous Orange Spelt

I experience my first muffin related injury while making these, just a bloody knuckle while zesting, nothing serious, just sayin', i work hard for the muffin. After bloodying my knuckle i was left with extra zest so i made a zest sugar topping. I think it makes the muffin a little too orangy but i am not really a fan of citrus so i will leave it up to you.

2 cups spelt flour
1 3/4 tsp baking powder
1 1/2 tsp orange zest
1/4 tsp allspice
1/2 tsp salt
1/2 cup orange juice
1/4 cup apple sauce
1/3 cup oil
1/2 cup brown sugar
1 1/2tsp vanilla
4 tbs flax + 6 tbs water (2 "eggs")
optional topping:
1 tsp zest orange (or whatever is left over)
1/4 cup unprocessed sugar
tbs flour
1 tsp oil


*preheat oven 375

Sitr together dry ingredients in a large bowl. In a small bowl beat orange juice, apple sauce, oil, sugar, vanilla, eggs. Mix up topping. Spoon into line muffin tin. Sprinkle on topping. Bake for 20 minutes.

Cheeky Cherry Chocolate

This recipes a bit on the complicated side for a muffin but you gotta go the extra mile to get the extra chocolatey goodness.

6 tbsp "butter"
4 ounces bitter sweet chocolate
1 cup soy cream
4 tbs flax + 6 tbs water (2 "eggs")
1 1/3 cup flour
1/3 cup unsweetend cocoa
1/3 cup packed brown sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup dried cherries
1/2 cup semi sweet chocolate chips
1/4 unrefined cane sugar

*preheat oven 375

In a thick bottomed sauce pan heat "butter" and bitter sweet chocolate and "cream" over low heat until just melted. Set aside and let cool for 15 min (or stick it out side at 2 am when is 5 degrees outside for like 5 minutes). When its cool by whatever means necessary add "egg". In large bowl whisk flour, cocoa, brown sugar, baking powder, baking soda, and salt. Add chocolate mixture, stir until just mixed. fold in cherries. Spoon into lined muffin tin . Sprinkle with chocolate chips and cane sugar. Bake 20-25 minutes.

Extra-Special Expresso

For andrew...you actually put instant expresso in these.

2 Cups of flour
1/2 cup sugar
1 tbs baking powder
2 tsp instant expresso
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1 cup chocolate "milk"
1/2 cup melted "butter"
2 tbs flax + 3 tbs water (1 "egg")
1 tsp vanilla extract
3/4 cup chocolate chunk

*Preheat oven 375

combine dry ingredients in a large bowl. In a separate bowl mix together wet stuff. Add chocolate chips to flour mix. Add wet stuff to dry. Stir until just mixed. Spoon into lined muffin tin. Bake for 20-25 minutes.

Bangin' Blueberry Corn

Slightly crumbly but then i guess so is cornbread.

1 1/2 cup corn meal
1 1/2 cup flour
1 tbs baking powder
1/2 tsp salt
1/2 cup sugar
1/2 cup oil
1 1/4 cup "milk"
2 tbs soy yogurt
2 tbs flax + 3 tbs water (1 "egg")
1 tsp vanilla
1 1/4 blue berries

Sift together dry ingredients in a large bowl. In a separate bowl mix wet ingredients. Add blue berries to flour and mix gently. Add wet stuff and stir until just mixed. Spoon into lined muffin tin. Bake 20-25 minutes.

Shut your mouth, Sugar and Spice Carrot!?

I wish theses had turned out more orange. The muffins overall are getting pretty monochromatic. I think i could have just covered the tops of these with carrots. I need to diversify!

1 3/4 cup whole wheat flour
1/2 cup unbleached all purpose flour
1/4 cup cane suger
1 tsp baking soda
2 tsp baking powder
1 tsp cinnamon
3/4 tsp ginger
1/8 tsp cloves
1/2 tsp salt
1/3 cup agave
1/3 cup unsweetened a-sauce
3/4 cup "milk"
1 tsp vanilla
3-4 shredded carrots
Topping:
1/4 cup cane sugar
2 tbs flour
1 tbs oil

*Preheat oven 375

In a small bowl mix together topping. Combine dry ingredients in a large bowl. In a separate bowl mix together wet stuff. Add wet to dry and fold in carrots. Stir until just mixed. Spoon into lined muffin tin. Sprinkle topping. Bake for 20-25 minutes.

Perky Peanut Butter Pretzel Muffins

the inspiration for these muffins came out of a muffin brainstorming session with my room mate leigh. And i must say, leigh, pretzels on a muffin....genius.

2 1/2 cup flour
1 tbs baking powder
1/2 tsp salt
1 cup sugar
1 cup peanut butter
4 tbs flax + 6 tbs water (two "eggs")
1 3/4 cup "milk"
1/2 oil
1 tsp vanilla
1 cup chocolate chips (for batter)
Topping:
1 cup crushed pretzels
1/2 cup chocolate chips
2-4 tbs "milk"

*Preheat 375

Crush or chop 1 cup of pretzels. Set up double boiler with topping chocolate chips in it. Combine flour, baking, powder, salt, and sugar in a large bowl. In a smaller bowl combine pb, "eggs", "milk", oil, and vanilla. Turn on double boiler. Add wet mix to dry and fold in chocolate chips. Stir until just mixed. Spoon Batter into lined muffin tins (keep and eye on the chocolate melting in double boiler). As the chocolate starts to melt in double boiler mix in "milk" until you get it to a drizzelable constistency. Sprinkle pretzels ontop of each muffin. Drizzel melted "milk chocolate" onto each muffin. Bake 20 -25 Minutes.

Pants Party Peanut Butter 1/9/09


A HUGE crowd pleaser.

2 1/2 cup flour
1 tbs baking powder
1/2 tsp salt
1 cup sugar
1 cup peanut butter
1 banana
1 3/4 cup "milk"
1/2 cup oil
1 tsp vanilla
1 cup semi-sweet chocolate chips (make sure they are milk free)

*Preheat oven 375

In large bowl combine dry ingredients. In a separate bowl mash banana and mix with wet ingredients and peanut butter. Add wet stuff and chips to dry stuff and stir until just mixed. Spoon into lined muffin tin and bake for 25 minutes.

Daringly Dandy Date Orange 1/8/09

i am not that into oranges in general...but i hear these came out tasty.

2 cup flour
2/3 cup light brown sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 salt
1/2 cinnamon
1 tbs orange zest
1/3 cup fresh orange juice
2/3 cup "milk" (+ 2 tsp vinegar)
1 "egg" (2 tbs flax + 3 tbs water mixed in small bowl)
1 tsp vanilla
4 tbs "butter"
2/3 cupp chopped dates
2/3 cup walnuts chopped

In a large bowl mix together dry ingredients including orange zest. In a seperate small bowl combine wet stuff. Add wet to dry then fold in dates and nuts. Stir until just mixed. Spoon into muffin lined muffin tins. Bake 20-25 minutes.

Poppin Pumpkin Chocolatechip 1/7/08

I usually make these around halloween but they are awesome anytime.

3 cups flour
2 tbsp white sugar
1 tbsp baking powder
1tsp salt
1/8 tsp ground cloves
1/8 tsp allspice
1/4 tsp ginger
1/2 tsp nutmeg
1 tsp cinnamon
4tbs flax + 6tbs water
1 cup "milk"
1 cup canned pumpkin
1 cup brown sugar
1/4 cup oil
1 cup chocolate chip

*Preheat oven 375

Combine dry ingredients in large bowl. In a separate bowl combine wet stuff and brown sugar. Add wet stuff and chocolate chips to dry mixture. Stir until just mixed. Spoon in lined muffin tin. Bake for 20-25 minutes.

Muffin:
3 cups of flour
1 cup of sugar
1 tbsp baking powder
3 tsp cinnamon
1 tsp salt
1/2 "butter"
4 tbs flax + 6 tbs water (2 "eggs")
3/4 -1 cup "milk"
2 Granny Smith or Macintosh Apples

*Preheat oven 350

In small bowl mix together topping. Mix together dry ingredients in a large bowl. In a small bowl mix together "egg" mixture. Peal both apples dice into small pieces, set aside. Cut butter into dry mixture. Add "milk", "egg", one apple chopped, and grate second apple into mix. Stir until just mixed. Spoon into lined muffin tin. Sprinkle topping over each. Bake for 20-25

Brain Blowing Banana Blueberry 1/5/09

These always come out great. Supper soft texture. Also i grind the ginger and the cinnamon fresh in my spice grinder (coffee grinder exclusively used for spices).

2 1/4 cup flour
1 tbs baking powder
1 tsp ground cinnamon
1 tsp ground ginger
1/4 tsp salt
3/4 cup sugar
2/3 cup "milk"
2 large bananas
1/4 cup oil
2 tbs molases
1 tsp vanilla
1 cup fresh blueberries

*Preheat oven 375

Mix together all the dry ingredients. In a separate bowl mash bananas and combine with oil, milk, mollases, and vanilla. Add blue berries to flour coating them with the flour (this will help to keep the berries suspended in the batter especially if you are using frozen blueberries). Add wet stuff to flour mixture. Stir until just mixed. Bake 20-25 minutes.

Crazy Cranberry Lemon Poppyseed 1/4/09

These are my gran's favorite.

1 1/2 cup Flour
2 tsp baking powder
1/4 tsp salt
1 tbs poppy seed
1/4 cups dried cranberries
3/4 sugar
1/4 cup "butter"
2tbs Flax + 3 tbs water (1 "egg")
1 tsp lemon extract
1/2 tsp vanilla extract
3/4 cup "milk"

*Preheat Oven 350

In a large bowl mix flour, baking powder, salt, poppy seeds and cranberries. In a seperate smaller bowl cream together "butter", "egg", and extract. Add "milk". Add mixture to the dry stuff. Stir until just mixed. Spoon into lined muffin tins. Bake for 20 minutes.

Awfully Amazing Almond Muffins 1/3/09

2 1/4 cups flour
1/2 cup sugar
1 tbsp baking powder
1/4 tsp cinnamon
1/4 tsp nutmeg
1/8 tap salt
3/4 cup milk
2tbs flax + 3 tbs water
1/2 cup oil
1/2 tsp almond extract
1/2 cup sliced almonds

Topping:
1/4 cup almonds
1/4 cup sugar
2 tbs flour
2 tsp oil

*pre heat oven 375

Mix together dry ingredients. Add wet stuff and chopped almonds. Stir until just mixed. In a separate small bowl mix together topping . Spoon into lined tins. sprinkle topping. Bake for 20-25 minutes

Chastity Challenging Chocolate Chip 1/2/09

This is a fan favorite...there's a surprise inside.
*vegan tip* most generic chocolate chips are vegan so you don't have to go fancy organic to go vegan

2 cups flour
1 cup unsweetend cocoa powder
1 tbsp baking powder
1/2 tsp salt
1 cup sugar
1 3/4 cup "milk" (Chocolate)
1/2 cup oil
1 tsp vanilla
1 cup semisweet chocolate chips

Filling:
1 cup of Peanut Butter
2 tbs Oil
1/4 Cup powdered sugar

*Preheat Oven 400

Mix together dry ingredients (I know it is old school but...Sift together flour and Cocoa Powder). Make well in the dry stuff and add in the wet stuff. Mix slightly then add the chips stirring until batter is just mixed. In a seperate small bowl mix together filling. Using a lined cup cake tin (its structurally important to use a liner because of the filling) spoon half the batter into the cups. I like to hit the tin a few times on the counter at this point to settle the batter in. Then spoon a dollop of the filling in each tin cup. Use the rest of the batter to fill in the tins. Bake for 25-30 minutes.

Bowl Benefitting Bran 1/1/09

My first batch of the new year. They were made in cleveland, OH. They will probably be the only batch not made in my Athens kitchen. Anyway they turned out pretty darn good.

Word to the wise...don't be alarmed when baking with sunflower seeds...they are supposed to turn bright green after baking.

Bowel Benefiting Bran

1 1/3 cup flour
1 cup wheat bran
1/2 cup sugar
1 tsp b.s.
1/8 tsp salt
1 1/4 cup of "milk"
1/4 cup unsweetened apple sauce
2 tbsp ground flax
2 tbsp oil
1 tsp vanilla
1/4 cup roasted unsalted sunflower seeds

*Pre Heat oven 350

Mix dry ingredients together in a large bowl with a wisk. In a seperate smalled bowl stir together all of the wet ingredients. Add the wet stuff to the dry stuff. Stir until just mixed, its ok if there are bits of flour, better that than a dense muffin. Fold in sunflower seeds. Spoon into a lined or greased muffin tin. Bake for 20-25 minutes.

muffin-a-day



On January first i began baking a batch of muffins every day. I was prompted to begin this project by a friend in Pittsburgh who is instigating a happening called fun-a-day. Fun-a-Day started in Philadelphia 5 years ago. Last year Pittsburgh hopped on and this year San Fran Bay is joining in
. What began as simply participation on my part has turned into a personal project with numerous manifestations and amazingly exciting possibilities.

I plan to blog every day about the muffin from that day. We are 8 days in so i have a bit of catching up to do. I will include a photo of a muffin from each batch. I will also be preserving that muffin and ultimately displaying all 31 preserved muffins in an exhibition. Along with a photo i will include the recipe for each muffins. Some
of these recipes are completely original and some are veganized amalgamations of recipes found in old cook books and the internet. Yes, all the muffins are vegan. So when i refer to "milk" i mean soy/almond, "Butter" i mean vegan margarine, "Eggs" i mean 2tbs flax+3tbs water (my favorite egg substitute).
